Another quick (photo) post relating to Easter. Hope you’ve all enjoyed the long weekend so far. I’ve definitely been a busy girl and have been trying to get into the spirit of Easter and not just filling my belly with chocolates. I’ve been spending more time in the kitchen lately making some Easter treats :)
First up I made from the Sydney baking blog raspberri cupcakes the cheesecake filled chocolate eggs and featuring my bunny pops from my last post. It just so happened that I got the same hollow eggs as a gift from work and well, having only seen this post a few hours later I thought why not give it a go. The cheesecake recipe ingredients are staples I have in my kitchen anyways. As for the curd, I adapted this a little. Instead of using passionfruit and apricot jam (like raspberri cupcakes did) I just used the pulp of some passionfruit that I had lying around from home. It worked a treat and it tasted absolutely delicious. Thank you raspberri cupcakes for the fantastic recipe.
Secondly, my cousin sent me a link to make some silhouette bunnies. I thought it was absolutely adorable and I knew I just had to make them, stat! However, I adapted this recipe also. It is so simple to make and takes no more than a couple minutes to get a warren of bunnies. I used chocolate buttons as the body. Melted extra chocolate for the head and ears and piped it accordingly, ensuring the head overlapped with the body so that when it dried it dried in one piece. Finally, stick a mini marshmallow as the bunnies’ tail with a bit of the melted chocolate. Set in the fridge and voila – some backside bunnies! Easy as that :)
