Usually it’s the parentals who prep and make everything for the feast that we have pre-CNY, CNY and post-CNY. This year I thought I’d contribute and add something to the table – peanut cookie bites.

Ice Cream Cookie Sandwich Cake

I want to take this opportunity to wish my big brother, McSloppy Deadweight (his new nickname), a Happy 28th Birthday! <3 To celebrate this joyous occasion, as well as my sister-in-law’s birthday who’s birthday is three days later (Happy 26th Birthday Mrs McSloppy Deadweight for thursday!!), I thought I would bake them a cake. For something fun, I wanted to (and had to) bake them an ice cream cookie sandwich cake!
 

Ice Cream Cookie Sandwich Cake - final

The name is self explanatory – ice cream that is sandwiched between two massive cookies! As I was limited on time, I did cheat and buy the ice cream. It definitely works out to be more convenient alternative. The cookie recipe I used is from Taste, obviously making only two large cookies out of the cookie dough. I did adapt the recipe slightly - I used chocolate M&Ms instead of chocolate pieces/chips as I wanted colourful looking cookies.

I didn’t plan it out too well. I constructed the cake and put it back in the freezer so that the ice cream could set/harden again, but it totally crossed my mind that the cookies would freeze and become rock hard. So come time to serving it, it was a disaster.
 
My advice for those who will try such a thing, this ice cream cookie sandwich cake should be served immediately after made/constructed. This is so you get the best of both the cookie and the ice cream. Despite the difficulties of trying to serve the cake, it was still delicious…….

Happy One Month, baby Leon

This is just a quick post to say.. Happy One Month to my baby nephew, Leon. I cannot believe he is a month old already! To celebrate this occassion I baked my favourite cupcakes – red velvet cupcakes with cream cheese frosting (recipe used from my friend, Betty’s Bites).

Enjoy it little man…. and can I just say, I love my baby bottle and baby jumpsuit cookie cutter :D And please excuse the wonkyness of the shapes – it was my first time dying fondant and using cookie cutters (yes, I am a noob).

Cookie Monster Cupcakes

Before I start this post, I would like to give credit to Penguin Says Feed Me for posting up the recipe for this awesome cookie monster cupcake. When I first came across it sometime last year, I could not take my eyes off it. I thought it was absolutely adorable and I became all squirmy inside. Since becoming an Auntie over three years ago, I have been a sucker for all things cute, and this just topped it off. I knew I wanted to make these for my nephews one day. But who knew they weren’t the ones who asked for these…

Cookie Monster Cupcakes

Earlier last week, a friend of mine, Tez, had invited me to his birthday and the topic was cakes for some reason. He re-tweeted a sneaker cake (this boy is obssessed about kicks and sneakers – it’s beyond crazy) and the conversation developed from there. It was a little too late to ask S to make a cake for him, knowing how busy she was. From there, cookie monster cupcakes somehow made its way in the conversation. It was a two-way thing, Tez sort of asked me to make them and I sort of offered to make them. Challenge accepted.

Cookie Monster Cupcakes

Knowing that I was going to attempt to make some cookie monster cupcakes, I quickly refered to Penguin Says Feed Me‘s recipe found here. I was very excited to bake these little babies. The recipe is very easy to follow and I had no troubles at all. Thanks again Penguin for posting up the recipe.


Tina’s Tips:

  • I used bought subway cookies for the cookies in the mouth for conveniency. Feel free to bake your own.
  • Don’t forget to mound the icing generously so you get a rounder cupcake. I didn’t think about this at the time hence why my cookie monster faces are a bit flat
  • Smooth out the icing as best as you can
  • Generously sprinkle the blue coconut “fur” on the cupcake and let it stick naturally. Do not press otherwise you will flatten the cupcake.

Apologies to Tez for only receiving ten cookie monster cupcakes. My nephews saw these little monsters and wanted some. I couldn’t resist so gave in and handed them one each. It was hilarious watching them attempt to eat it. I don’t think they knew where to start – the googly eyes, the cookie or the fur? In the end they had blue all over their faces and sleeves, and they could not have looked more adorable! I hope you had a more exciting (if not the same) experience Tez. Happy 24th Birthday!
