This winter sure feels like it’s all about the ramen. We welcome another ramen joint that enters the Sydney restaurant scene. I sure have no complaints as I think it’s the perfect winter warmer.
Hakata-Maru Ramen is located in the Market City food court on Level 3.
Making a visit brought back good memories of my 4 years at uni as I used to be at this food court nearly every second day since I was only across the road.

What is Hakata Ramen?
Black Tonkotsu $8.80
The same tonkotsu based is used across the white, red and black ramens, but the black is topped with garlic oil and fried garlic flakes. I loved the new flavour dimension that the garlic oil and flakes gave to the pork bone broth. I’m a sucker for garlic flakes as Dad uses it frequently in his home cooking so I was definitely welcoming it with open arms.

Hakata style noodles are served at Hakata-Maru Ramen, which are thinner than what most ramen places serve. Like Ippudo, you have a choice as to how you prefer your noodles cooked. I don’t request for anything so it is cooked to the standard – al dente – which is just cooked through but still retains a bite.
I am very impressed with these noodles and I think they could very well be the star of the show.
Chicken Wing Karaage $2
I order a side of chicken wings to go with my bowl of ramen for an extra $2. The wings are battered with an aromatic spice blend that keeps you wanting more. Well seasoned and crunchy batter is so very hard to go wrong by.
Red Tonkotsu $8.80
My dining companion goes for the red tonkotsu which is topped with a special spicy miso. It gives a real good hit of spice at the end of every mouth full. This is a bowl for the chilli lovers – for those that can’t really handle it, I’d suggest to go for something else.
I’d love to go back to basics and try the white tonkotsu since it is the basis of all the bowls of ramen served. I enjoyed the black and red, so I’m sure there’s no doubt the white is going to be a winner also.
The price is definitely the most competitive out there for the time being, and although you don’t get all the fancy toppings, they are available for purchase as per the menu above. Great value and good tasting food sure will bring me in for another visit as well as many others I’d say.

Matcha Soft Serves in a Cone $2.90 each
This is the absolute best matcha soft serve I’ve ever had (I’ve had it a handful of times at random places)! It was smooth and creamy, and it had a good hit of the matcha. Pure bliss, even in winter.
Matcha Frappe $5
To accompany me on my commute home, I got a matcha frappe. Chanoma have also made this really well with the blend of ice, milk and matcha being spot on. I really do love how they are rather generous with the matcha – it really shines through.
