After a glorious Sunday morning run on the route of The Bay Run (more details shortly) we treat ourselves to a well deserved brunch, which is my favorite meal of the day, at a nearby cafe referred to by the oh so lovely Maria :)

Copo is a cafe and diner in Drummoyne. Upon arrival there’s quite a queue which blocks up the main entrance. Clearly that’s a good sign, right? Not only is there a  wait for a table, the takeaway line seems just as long. Not a bad idea for a cafe to be honest.

The menu is massive. There was so much on offer that it really dazzled me. Before starting the decision making process we order some coffees. It’s been my first coffee in about 2 months! I am a huge fan of Campos coffees and this one did not disappoint. It was a strong coffee bean but it was extremely smooth and a treat to go down. Delightful!

With missing out on the baked eggs at Circa Espresso I knew I had to pick it this time. Out comes this little iron pan looking absolutely stunning! Eggs. Potatoes. Chorizo. Chimichurri. Can’t really go wrong can you? It wasn’t too heavy but it still was filling. I really enjoyed the combination. The chimichurri had an acidic/vinegary element which broke up the heaviness of the potatoes and chorizo. Couldn’t have asked for a better meal after a good run :)

Copo - Poached Eggs with Chimichurri

Eggs (any style) with Toast and Chimmichurri $10.90

The boy opts for something more simple – poached eggs with toast and chimichurri. The eggs didn’t ooze as much as we usually like them to be but at least they weren’t over cooked. The quality of the eggs were amazing – fresh is what they were.

Here is a photo of the view we had before starting The Bay Run! It was absolutely stunning for a cold winter’s morning!

For those who are interested the official The Bay Run race is on Sunday August 5th. The Boy and I are doing the City 2 Surf this year so thought The Bay Run would be our “training/practice” for the 14km race to come.

    What a beautiful morning. And those eggs seem like they’re a great start to the day at a very reasonable price. Good on you for preparing for the City2Surf – I’ve never done that run but I sure should have! xx

    Those baked eggs look amazing! And I’m impressed you did the bay run. I have some friends who always do the bay run on weekends then go out for a great breakfast… maybe I should join them!

    The sides and flavours of all of the baked egg combinations I see always look great, but I hate runny yolks, so I abstain. :(

      Yeah I don’t think it would taste the same with fully cooked eggs. Try scrambled perhaps?
